Norwegian Pancakes (Pannekaker)

Norwegian pancakes (pannekaker) are one of my favorite dishes to make for brunch parties or lazy Sunday mornings. Somewhere between a crepe and an American pancake, they are soft and thin with crispy edges. And, they make a great base for jams, fruit, cheeses, and sauces!
