I’ve been searching around Pinterest lately and have found some pretty awesome recipes. I also have made up a few pretty good ones myself.
This recipe was inspired from greatist.com. I actually have made these before using Rachael Ray’s recipe, but I was not a fan of it. I ended up making up my own flavor combination, even though I did use part of greatist.com’s recipe! I also made some changes based on my oven’s cooking time, etc. so just do the recipe according to your kitchen. Oh! And I halved the recipe because I plan on making another recipe with the rest of the beans! Half the recipe was the perfect portion for one!
Ingredients you’ll need:
1 15 oz. can of chickpeas
A splash of olive oil (about 1/2-1 Tbs)
Salt and Pepper for flavor
Any kind of spices you like. *I’ll post some ideas below!*
1. Heat oven to 450*.
2. Drain and rinse the chickpeas. Make sure to drain all of the water!
3. Mix the chickpeas, olive oil, salt, pepper, and spices together. I used garlic powder, ceyenne pepper, paprika, and cumin in my recipe. I didn’t measure everything, but I probably used about 1 tsp. garlic powder, 1/4 tsp. ceyenne pepper, and a few dashes of paprika/cumin!
4. Lay the chickpeas so that they’re evenly spread on a tinfoil lined sheet pan. Bake them for 15 minutes in the oven. Roll them and bake them for about 5-10 more minutes. greatist.com says to bake them for 15 more minutes but mine almost burned! Again, just use your oven and eyeballs as a guide!
This is a perfect crunchy, healthy snack and I will definitely be making them again!
As I promised, here’s some more ideas for flavors that I came up with:
Italian Seasoning, Garlic Powder, and Parmesan Cheese (I would put the cheese on in the last few minutes so it doesn’t burn!)
Curry Powder, Cumin, and Garlic Powder
Taco Seasoning and some mild 2% cheese (again, last minute!)
Ranch dressing mix and hot sauce
greatist.com says to use sugar and cinnamon if you have a sweet tooth. Sounds awesome!
